Acorn Squash Recipe

This little baby only packs 42 cals/per cups

1 Acorn Squash: Puncture with sharp knife 10-12 times depending on the size
2. Microwave for 8 mins/per lb or bake at 350 for 10-12 minutes (I found microwaving was super easy, and if you bake it make sure you slice it down the middle, face down with foil covering it)
3. Scoop out seeds, mix: 2 tsp of brown sugar, 2 tsp of butter and salt & pepper in with the squash and mash together in a separate bowl. 

Eat and enjoy! Seriously so filling (I had a cup 1/2 and was stuffed, and super delicious & healthy!!) Thank you Safeway for this easy recipe and instructions that came with on a sticker. 

*A medium squash gave me about 4 cups, although it wasn't quite ripe so it may give you a bit more!
